Autumn and Halloween at the table translates into: pumpkin soup
Pumpkin is a fruit, extremely versatile in the kitchen and for which just a few ingredients are enough to transform it into a first course with a unique flavor. The velvety is a pumpkin-based first course perfect to warm the palates on the coldest evenings. The important thing, in our opinion, is to add tomato puree to the preparation.
Halloween is approaching, celebrate it also at the table with this “frighteningly” tasty first course.
Ingredients for 6 people:
450 g Pumpkin
400 ml Tomato puree
1 Porro
500 ml Vegetable broth
Milk
4 tablespoons Extra virgin olive oil
salt
Clean the pumpkin and cut it into cubes.
In a saucepan, heat the oil and brown the white part of the finely chopped leek together with the pumpkin. Add salt, pepper and sprinkle with the hot vegetable broth and cook for about twenty minutes.
Add the Strianese tomato puree with a few tablespoons of milk and cook for another 10 minutes.
Blend with a mini pimmer until the mixture is pureed.
