In this recipe, we will guide you through preparing an exceptional dish that combines the freshness of datterini tomatoes with the delicacy of shrimp. Ingredients:
320g of linguine
200g of cleaned shrimp
250g of Strianese Red Datterini Tomatoes
2 cloves of garlic, minced
1 fresh chili pepper, minced (optional for a touch of spiciness)
3 tablespoons of extra virgin olive oil
Salt and freshly ground black pepper, to taste
A handful of fresh parsley, finely chopped
Grated lemon zest
Instructions:
Start by bringing a pot of lightly salted water to a boil. Cook the linguine according to the package instructions until they are al dente. Remember to reserve a cup of cooking water before draining. In the meantime, in a large skillet, heat the olive oil over medium heat. Add the minced garlic and, if desired, the fresh chili pepper. Sauté for a couple of minutes until the garlic becomes aromatic but doesn’t color.
Add the cleaned shrimp to the skillet and cook for about 2-3 minutes per side, or until they turn pink and are well-cooked. Remove them from the skillet and set them aside. In the same skillet, add the halved Strianese Red Datterini Tomatoes and cook them for about 5-7 minutes over medium-low heat. Slightly crush them with the back of a spoon to release their delicious juices.
Combine the previously cooked shrimp with the Red Datterini Tomatoes and gently mix. Cook for a couple of minutes to heat everything through. Add the linguine to the Red Datterini Tomato and shrimp sauce, mixing well to ensure the linguine absorb the flavors. If the mixture appears too dry, you can add some of the reserved cooking water. Season with salt and black pepper to taste. Add the chopped parsley and grated lemon zest for a fresh touch. Serve your hot Linguine with Shrimp and Red Datterini Tomatoes, garnished with a few fresh Red Datterini Tomatoes and a sprinkle of parsley.
